Natural coffee tend to have more fruit and superb flavors because the bean has more time to interact with the natural sugars from the cherry when enzymes break down the mucilage around the bean. In order to have consistent quality, we carefully dry naturals, turning them often and removing over-ripes then to make sure off flavors won't emerge in the roasting process.

Washed coffees are prized for their acidty and vibrant notes. Removing the entire cherry prior to drying allows the intrinsic flavors of the bean to shine without anything holding them back.
